Beef and Spinach Lasagna Roll-Ups for Two

  • Heat oven to 350. Cook beef and onion over medium-high heat; drain. Stir in 1/2 cup pasta sauce. Remove from heat.
  • In a small bowl, beat egg white. Add ricotta, parmesan, oregano, and 1/2 cup mozzarella cheese.
  • Spread 3 Tablespoons of pasta sauce in bottom of an 8 inch square pan.
  • Spread 1/4 of ricotta on one noodle. Add 1/4 cup spinach leaves, 1/4 of beef. Starting at one short end, roll up loosely.
  • Place seam side down in baking dish. Repeat with remaining 3 noodles. Top with remaining sauce. Cover with foil.
  • Bake 30 minutes. Remove foil and add remaining mozzarella cheese. Bake 5 more minutes.

  1. Terrific recipe! I really love these and I like to make them with lean ground turkey instead of beef, and lowfat ricotta, but that is just a personal preference. I really like your version, it is lighter than most I have seen. Thanks for a GREAT recipe!
     
  2. Oh these are very easy to make and very delicious! I doubled the recipe so that I could make a pan for my two brothers. It was still easy to put together. Everyone loves this recipe. It's a little different from the usually lasagna!!! DH and I loved this and I will be making it again and again. Thanks KeBel for posting this recipe. I am always looking for recipes for two people!
     
  3. First, I have to apologize for not reviewing this sooner. I made these for the football pool you won a while back. I actually made these ahead of time on Sunday, put them in the frig and cooked them for dinner on Monday. I used my own pasta sauce but other then that followed the recipe as posted. These were really fun and make a nice dinner with a salad and some Italian bread ;)
     
  4. These were really good and so simple to make!! Followed the recipe exactly - found I needed a little more ricotta so I just added it to the mix - and used a Vodka pasta sauce. We really enjoyed this and in fact it made enough for me to have it for lunch today :) Thanks for a keeper!
