Beef and Barley Soup (Crock Pot)

- 1 (28 ounce) can tomatoes, diced
- 2 tablespoons oil
- 2 onions, minced
- 1⁄4 cup tomato paste
- 1 teaspoon dried thyme
- salt
- pepper
- 1⁄2 cup red wine
- 2 cups beef broth
- 2 cups chicken broth
- 2 carrots, cut into pieces
- 1⁄2 head cabbage, shredded
- 1⁄3 cup soy sauce
- 1⁄4 cup pearl barley
- 2 lbs beef stew meat, cubed
- 1⁄4 cup parsley, minced
directions
- In a food processor puree tomatoes.
- In a large skillet over medium high heat heat the oil and then add the onions, beef, tomato paste, thyme and 1/4 teaspoon salt. Saute for 10-15 minutes.
- Stir in wine.
- Put mixture in crock pot.
- Stir in pureed tomatoes, broths, carrots, cabbage, soy sauce and barley.
- Season with salt and pepper.
- Cook on low for 9-11 hours.
- Stir in parsley.

If I was a very novice cook, I would not have understood the directions. No where in the directions did it say what to do with the meat. I browned the meat with the onions then added the thyme and the tomato paste. I also did not have any red wine, so I used water in its place. I also added a couple of bay leaves and some celery stalks along with the leaves. The soup along with a crusty roll makes a very hearty lunch or supper. Thanks for posting. I will definitely make this soup again. Very flavourful.

A warm pot of soup, on a cold rainy night really hit the spot before we head out to the high school football game. Loved the thick tomato base broth, I just wish I added more barley, as I LOVE barley. I'm sure we will have another bowl when we get back from the game. Thank you for posting this recipe.
