My kind of recipe - fresh whole ingredients doing what they do & complimenting each other nicely!! This was very light and delicious!! I loved sipping this out on the patio in the sun but I loved it even more poured over cucumber slices with chives generously sprinkled over top! I don't like to waste & I'm lazy so I didn't peel the cucumber and I after I juiced the cucumber & lemon I poured that into the blender with the avocado instead of juicing the avocado which I was very nervous about. Very nice drink/dressing/saucey goodness!! Thanks!! Made for Veg*n Swap 24!
I did this all in my blender with a bit of spring water. I'm imagining it with sea salt. I cut the lemon slices so that there was no pith or seeds whatsoever! I like the title of the recipe as well.
DO NOT MAKE THIS IN A JUICER as the recipe says. I thought it was odd, but I'd never tried juicing an avocado, most recipes have you add the juice to a blender then add the avocado. But I thought, hey... it says throw it in the juicer! And since I'm juice cleansing right now and apparently have lost my common sense, I followed directions. (Good old Jack can't be wrong right?) Well, whoever interpreted this recipe was. What followed was a cucumber/citrus water infusion and 20 minutes of cleaning avocado flesh out of the juicer bits. So sad. The avocado was just the perfect ripeness. I should have eaten it with my cucumber juice....
