One of my favorite herbs, cilantro always takes me back to New Mexico and I jump at any chance to use it fresh! Unfortunately, by yesterday my cilantro was not looking so healthy and I had to use dried for this soup instead. The sausage I used was smoked chicken and turkey with mozzarella, because it was the one that said it was gluten free. It turned out to have quite a bit of spice to it so I opted to use just one jalapeno. I let this soup cook itself in the crock pot for about 4 hours (a new crock on low), and it was a delicious, hearty meal at the end of a long day. Even though it was on the spicy side, my 4 year old ate 3 bowls of it! I can't wait to dig into the leftovers today & have DH & DS try it for lunch. Thanks for sharing your creation, Pamela!
