This comes from the Chronic Fatigue Syndrome Cookbook by Mary Hale and Chris Miller.
- 4 cups chicken broth
- 1⁄2 cup carrot, sliced
- 1⁄2 cup onion, sliced
- 2 tablespoons lemon juice
- 3 cups white beans, cooked and drained or 3 cups canned white beans
- Combine broth, carrots, onion, and lemon juice in a saucepan.
- Simmer, covered, until carrots are tender.
- Stir in beans.
- Heat thoroughly.
