I got creative. Works best with garbanzos but again, most beans work.
- 3 tablespoons balsamic vinaigrette
- 15 ounces chickpeas, rinsed and drained
- 1⁄4 cup green bell pepper, chopped
- 1⁄3 cup fresh tomato, diced
- 1⁄4 cup baby carrots, finely chopped
- 1⁄4 cup black olives, chopped
- 2 green onions, chopped
- salt and pepper
- Mix it all together.
