This goes really good with an italian meal. I love to make this when our tomatoes are ripe.
- 1 (15 ounce) can great northern beans, drained and rinsed
- 2 small fresh tomatoes, diced
- 3 fresh basil leaves, chopped
- 2 tablespoons olive oil
- 1 tablespoon minced garlic
- salt and pepper
- Mix all ingredients well.
Quick and easy - and tastes good! I altered slightly by using dark red kidney beans (was using up a half can of them left from another recipe). To contrast the dark beans, I used yellow tomatoes. Cut the garlic to one clove (for a half recipe). After tasting, I added a splash of red wine vinegar. Will definitely keep this in mind for other times I have a partial can of beans to use. Great basic recipe! DH and I enjoyed it served atop some salad greens. The only reason I didn't give 5 stars is that 1 T. of raw garlic is a lot in a recipe this size. I increase the amount of garlic in almost every recipe, but in this case I used just one clove of minced garlic and it was delicious. Thanks, I'll be making again!
