Bean and Rice Patties in Pita With Yogurt Tahini Dressing

"This is a fun meal from Moosewood's Lowfat Favorites. The cookbook says this makes a lower fat substitute for felafel (which I love) - I don't know about replacing felafel, but these are good for their own sake. I added a bit more spice to the mix than the recipe called for - more cumin and a touch of cayenne - and next time I'll probably add even more - so feel free to season them however your family will like it best! Prep time does not include cooking brown rice."

  • Warm olive oil in nonstick skillet. Add onions, garlic and salt and cook on medium low heat, stirring often, for 5-10 minutes, till onions are tender.
  • Add the bell peppers and cumin and cook for 5 minutes more, till peppers are soft, stirring frequently.
  • Remove from heat and set aside.
  • Thoroughly mash the beans by hand in a large mixer bowl (I used a potato masher).
  • Combine the parsley, rice and lemon juice into the mashed beans.
  • Add the cooked vegetables and mix well.
  • Add black pepper to taste (and any other seasonings you might like, especially if you like things spicy).
  • At this point, you could chill the mixture till you're ready to make the patties - I did and it probably helped make them a little easier to handle.
  • Shape the mixture into about 18 small patties, about 2 1/2 inches across.
  • Prepare a large nonstick skillet with cooking spray.
  • Heat the skillet and cook the patties to medium heat till golden brown on the underside, about 5-8 minutes.
  • Gently turn them and lightly brown the other side, about 3-5 minutes longer.
  • Serve hot or at room temperature - good stuffed into pita pockets with chopped veggies tossed in oil and vinegar and toppped with yogurt tahini dressing.
  • For dressing:

  • Whisk together all the ingredients in a mixing bowl. Will keep for a week in a tightly covered container in the refrigerator.

  1. I really enjoyed these pitas - so healthy yet so much flavor! I used about 1 tsp extra of cumin plus 1/4 tsp paprika and 1/4 tsp black pepper (for the other seasonings in the patties). I did have problems with the patties...they were a little too moist to stick together as patties while baking (despite chilling..add flour in the future?), so I actually formed them into about 1 inch diameter balls (more like a felafel). Then, I cooked them on the skillet, rolling to brown the sides. The Yogurt Tahini Dressing was REALLY wonderful. I must say that I was a little unsure of it, but it complemented the 'patties' so well! Thanks pattikay!
     
  2. Very healthy good and cheap meal on a budget. To adjust I cooked my brown rice in vegetable brothe for extra flavor. I added a splash of Adobo seasoning apart from the cumin. Then before cooking them I added another sprinkle of Adobo on the outside. I served them on a wheat bun with greens just like a burger. Turned out very good with a nutty flavor.
     
  3. DD and I just finished having this for dinner. I made it as written, using 2 cans of drained and rinsed white kidney beans. We both loved it. Thanks for posting. This is going to be a family favourite.

The first time I ever set foot on California soil (or anywhere in the West, for that matter) was the day I moved here. I experienced a form of culture/environment shock for about a year&nbsp;- even the air is different out here! For the first year, I would look at the roads and driveways that wind steeply up and down the foothills and think, Man, how does anyone drive on those in the winter? Then I would remember&nbsp;- they do it the same way they do in the summer&nbsp;- with their windows down, wearing shorts and flip-flops. I love the fact that we are near a large city, near the ocean, near the desert, near the mountains&nbsp;- what more could I ask for? And yes, even though I swore it wouldn't happen to me after living for more than 40 years in places with many weather extremes&nbsp;- I now get chilly when the temperature dips below 70 and can barely bring myself to go outdoors if it's raining. However, I do NOT wear a parka and mittens when it's 65 degrees&nbsp;- a sweatshirt or light jacket will do. <br /><br />My husband and I met while attending seminary (I dropped out before finishing one semester but he got a Master of Divinity) and we got married after knowing each other for 6 months. We are quick to tell other people that we do not advise this course of action, but we celebrated our 27th anniversary this year, so I guess sometimes rash decisions work out quite nicely. So with my husband's MDiv and my undergraduate degree in religious studies, we now both work in pharmaceutical marketing research. Just what you would expect, right? I telecommute to the east coast for work each day; I'm primarily a writer/analyst. When I was in college, writing so many research papers and unable to decide what I wanted to do when I grew up, I used to jokingly say that I should find a job writing research papers. More than 20 years later, that?s basically what I do. Cool, huh? <br /><br />Our wonderful son was born when we were married just one year and a mere 15 years later our bright-eyed redhead came into our lives (okay, so she was totally bald till she was nearly 2, but she's definitely red now).
