Bean and Meat Chili

This is a super simple recipe that is nearly fool-proof and allows you to customize the taste.

• Cook Time: 8 hrs

Ingredients:

Serves: 8

Yield: 8.0 cups

• 1 ½ cups 13 bean soup mix
• 2 lbs beef (frozen is fine) or 2 lbs chicken (frozen is fine) or 2 lbs pork , roughly chopped (frozen is fine)
• 4 roma tomatoes , diced
• 2 green bell peppers , diced
• 1 onion , diced
• 3 garlic cloves , roughly chopped
• 2 tablespoons chili powder
• 1 tablespoon beef bouillon (better than bouillon brand)
• ¼ cup flour (optional)

Directions:

1. Place beans in a bowl and cover with water, let soak overnight in the fridge.
2. In the morning, combine all ingredients EXCEPT flour in a crockpot.
3. Cover with water.
4. Set on low for 8 hours or high for 6 hours.
5. Mix flour with water and pour into the pot about an hour before done if you'd like a thicker chili.
6. For gluten-free, please OMIT the thickening step.
