I got this from Paula Deen's Quick and Easy Meals Magazine. Sounds good but I have not tried it yet. Would be great as lunch or with a salad for a light dinner.
- Cut a lengthwise slit in each potato. Divide butter evenly between each potato.
- In a medium bowl, combine chicken and barbecue sauce.
- Spoon mixture evenly over each potato.
- Garnish with shredded Cheddar cheese, sour cream, cooked and crumbled bacon, chopped green onion, if desired.
