I got this from Paula Deen's Quick and Easy Meals Magazine. Sounds good but I have not tried it yet. Would be great as lunch or with a salad for a light dinner.

  1. Cut a lengthwise slit in each potato. Divide butter evenly between each potato.
  2. In a medium bowl, combine chicken and barbecue sauce.
  3. Spoon mixture evenly over each potato.
  4. Garnish with shredded Cheddar cheese, sour cream, cooked and crumbled bacon, chopped green onion, if desired.
