    • 3 teaspoons dried chilies
    • 1 tablespoon fennel seed
    • 3 teaspoons sea salt
    • 8 lean pork loin chops, pounded to flatten a little
    • 2 tablespoons olive oil

    Directions:

      Put chilli, fennel and sea salt into a mortar.

      Pound till coarse.

      Rub into pork chops.
    4. 4
      Leave to stand for 30 minutes.

      Brush grill or BBQ with the olive oil.

      Cook to your taste.

      serve with cous cous.
