  • Chop and wash Romaine Lettuce.
  • Rinse the corn and blak beans, and chop the cucmber and tomatos. You can add any other veggies you'd like.
  • Chop the chicken. (I often roast a whole chicken and then shred the chicken off the bone. It makes enough for a few chicken dishes all week).
  • Follow the direction on the Ranch packet. However, subsitute 1/2 cup of mayo for bbq sauce. If you want low fat subsitute plain yogurt for the mayo. Then only use 3/4 cup of milk. This way the dressing isn't too runny.
  • Put it all together!
