- vegetable oil cooking spray
- 4.92 ml cooking oil
- 157.80 ml coarsely chopped onion
- minced garlic
- 453.59 g boneless skinless chicken breast, cut into bite sized pieces
- 236.59 ml peeled cubed eggplant
- 118.29 ml chopped green bell pepper
- 411.06 g can whole tomatoes, undrained and chopped
- 4.92 ml dried whole thyme
- 4.92 ml paprika
- 2.46 ml salt
- 2.46 ml dried basil
- 2.46 ml cracked black pepper
- 2.46 ml hot sauce
- 236.59 ml thinly sliced zucchini
- 9.85 ml cornstarch
- 9.85 ml water
- 591.47 ml hot cooked long-grain rice
directions
- Coat a large nonstick skillet with cooking spray; add oil and place over medium high heat until hot.
- Add onion and garlic; saute until tender.
- Add chicken; saute 3 minutes or until chicken looses it's pink color, stirring constantly.
- Add eggplant and next 9 ingredients (green bell pepper through zucchini).
- Bring to a boil; cover.
- Reduce heat, and simmer 10 minutes.
- Combine cornstarch and water, add to skillet, stirring well.
- Cover and cook 5 minutes or until zucchini is tender.
- Remove from heat; let stand 5 minutes.
- Serve over rice.
