This drink is one that I came up with while bartending at a restaurant a couple of weeks ago. I recently served it at a Cinco de Mayo party, and it was a huge hit!
- 4 -5 pineapple chunks (can use can or fresh)
- 4 -5 mint leaves
- 2 ounces coconut rum
- 2 ounces pineapple rum
- 3 ounces cranberry juice
- 3 ounces pineapple juice
- Muddle pineapple and mint leaves in bottom of glass. Use a muddler, the flat end of a cooking spoon, etc.
- Add ice to fill glass.
- Add rest of ingredients, stir, and serve.
What a great twist to a mojito fresh rasberries and pineapple rum work great also very refreshing
