  1. Preheat oven to 350°F.
  2. Place rice in a fine-mesh strainer; rinse with cold water and then drain.
  3. Heat oil in a large saucepan over medium-high heat; Add ginger and garlic; cook 30 seconds, stirring constantly.
  4. Stir in rice; cook 1 minute, stirring constantly; add remaining ingredients, stirring to combine; bring to a boil.
  5. Cover; wrap handle of pan with foil; Bake at 350°F for 25 minutes, stirring once.
  6. Remove rice from oven; fluff rice with a fork, Serve.

I enjoyed this very much. Comfort food! I disagree with the other reviewer. I found it full of flavor. Between the garlic, ginger, basil and mint it was full of flavor. The only changes I did was using brown rice in which that led me to use 3 cups of chicken broth. I did heat olive oil adding ginger and garlic stirred in the rice. Then I added the herbs and pepper. Transfered all to my rice cooker with the broth and let it do it`s thing. Thanks Barb!

I made this tonight for dinner, actually had the same clipping in my recipes and finally decided to try it. I have to say it really was not a very good dish. I usully enjoy Cooking Light's recipes, but unfortunately not this one. I followed the recipe exactly and the only thing really good about it was the cooking method, as the rice came out perfectly cooked. Otherwise, it definitely needed much more seasoning..it was really blah and tastleless in my opinion. Definitely needs some salt or pepper, maybe some onion or shallots would be good too. Sorry this just didnt work out for me. I'd be curious to hear others opinions to see if someone else tried it as-is and thought differently...maybe it was just me. Sorry Barb!
