Awsome!!! I have made something similar...but this has become my all time favorite!! The only thing I did different was that I added a pinch of sugar to the dressing and I coarsely cut the basil and sprinkled it over the dish. The anchovy is a must...you don't really taste it, but it blends in so nicely. I will do this recipe again and again
I loved the dressing. I normally make this for lunch with just oil & vinegar, so the extra ingredients made it very tasty!

I've made a variation of this before, but I really liked your addition of the shallots. I did leave out the anchovy, though. I may have to go out to the store for more mozzarella today because I expect to finish off the first batch before my husband gets home from work!
This was great! I love tomato and cheese. Add in basil and it is a match made in heaven. I also left out the anchovy... just couldn't bring myself to eat one, sorry. It was still awesome. Thanks for posting!
Mozzarella, tomatoes and basil are such a classic, and this dressing is very good! Really like the shallots in the it (why haven't I thought of that??). I did omit the anchovy (sorry!) but it was delicious even without it! Thanks for posting!

Rita, I honestly love this dressing!! Our tomatoes aren't ripe yet, so used store bought..but my basil is doing well this year..(can't wait for fresh tomaoes!) I do have to add...I had some wonderful EVOO!! If it weren't for company I would have been slopping up dressing with crusty bread...and calling it dinner!!! Thanks Rita!

Really fantastic, even with store-bought tomatoes in the middle of winter. Can't wait to try this with yummy organic tomatoes from the farmer's market this summer! (Used anchovy paste instead of a diced anchovy.
