Basil Lemon Chicken Panini

"This takes some of my favorite flavors, basil and lemon, marries them with grilled chicken and melting cheese on a hot grilled bun. yum. I will post the chicken recipe on its own as well (you can use scaloppine too, I prefer the thicker cut) What I do is cook the chicken for dinner making extras and use the leftovers for the panini :)"

  • *For the chicken*.
  • Zest the lemon and squeeze the juice, combine zest and juice with oil and garlic in a small bowl.
  • Put chicken breasts between wax paper and pound to an even thickness.
  • Place in glad bag or bowl with marinade and leave for 30 minutes to 20 hours.
  • Grill chicken on bbq or broil it or even cook it in a hot skillet, 6-8 minutes approximately.
  • Cut ciabatta into 4 sandwich size pieces or use whatever bread you prefer. put 1 tbs of pesto on both sides of bread. (or fresh basil).
  • Add chicken, fontina cheese, tomatoes and spinach to each.
  • Grill in panini press or in a cast iron pan with another heated cast iron pan on top of it to press it down until cheese is melted.

  5. Now how could this be anything but great with recipe #241869 as the basis? Stuffed inside whole wheat pitas with homemade pesto, fresh mozzarella, tomato slices and basil leaves, it was just a super sandwich! Thanks for sharing your recipe(s)!

  1. These make an awesome sandwich. I used fresh basil and homegrown tomatoes. I substituted provolone cheese for the fontina because that's what I had on hand. Delicious!
     
  2. I made these for my DH and friend today, I used recipe#144195, I already had cooked chicken in my freezer so this was a breeze to throw together, I subbed mozza cheese for the fontina, the sandwich was really enjoyed, thanks for sharing MarraMamba!...Kitten:)

I have chronic medication resistant depression after 10 years on anti depressants that worked well but would stop working after a year or two, so now do my best at home living on disabilty. Not a bad thing, many have far worse health issues but i have been able to concentrate on food/cooking. My main passions are my cats. I live in the woods and somehow many starving strays or "dumps" have found the message babies who passed on left in the woods saying "suck lives at xxxx road. Most arrive sick and/or starving. Right now i have 2 that arrived with feline herpes and their attendant 2ndry bacterial infections but are doing beautifully. One old man who was going to be euthanized bc a lady who found him as a stray was moving and didnt want him...well he was a biter and rather grumpy who was in ICU for 3 days with a deadly gut infection which was fixed but he left with a diagnosis of diabetes. 3 months on insulin and finally diet controlled and he caught the herpes virus, respiratory symptom version and turned into a cuddler. Butterscotch must think "why didnt i figure out this cuddle stuff was great before i got sick!" Doing wonderfully even though he has bouts. he and the other kids are my babies. Sadly Butterscotch died of Lymphatic cancer in winter of 2008. A year before Big Boy arrived in my life, starving and weak. Full of affection he jumped into my arms and stayed, turns out he has FIV (cat hiv) so he needs to be watched closely.
