This was so good. I marinated the chicken for about 3 hours and it was so tender. The pepper relish makes it unique and is delicious! I used large rosette rolls which I sliced in half and toasted instead of the focaccia and then spinach and romaine lettuce instead of the arugula. Other than that, I followed the recipe. We will be having this again.

Excellent recipe for basil lovers! The red pepper relish is wonderful, the chicken marinade is easy and tenderizes the chicken, and it's healthy too! There appears to be a mistake in the ingredient list. The directions mention both fresh red pepper and roasted red pepper, but there is no fresh pepper in the ingredient list. As I was cooking at the lake I didn't bring a fresh pepper and had to substitute tomato. This would probably be a 5 star recipe with the correction made. Still, we loved it! Thank you, Laurie
