Basic Zucchini - Veggie Mix for Soups and Casseroles

"This a quick mix for your soups and stews. Just pull from the freezer and add anything else you like...and voila...it's dinner!"

• Yields: 8 cups

ingredients

• 29.58 ml olive oil
• 236.59 ml diced celery
• 236.59 ml minced onion
• 473.18 ml vegetable broth or 473.18 ml chicken broth
• 473.18 ml diced carrots
• 473.18 ml diced zucchini
• 236.59 ml corn
• 236.59 ml chopped bell pepper
• salt and pepper

directions

1. Saute onion and celery. Add broth and carrots. Simmer 20 minutes.
2. Add zucchini, corn and peppers. Simmer 10 minutes. Season with S&P.
3. Pack into freezer containers.
4. Freeze up to 3 months.
5. For Vegetarian option use Vegetable broth.
