This is very good basic salad dressing. The type of vinegar you use totally determines the character of it. For example, I really like an assertive local herb vinegar for summery salads. For versatility, you can't go wrong with a standard balsamic.
- Whisk together the oil and vinegar until emulsified.
- Add salt and pepper to taste.
- Use to dress 1 serving of salad.
I needed a basic dressing for a salad of chick peas, tomatoes, cucumber and avocado. This one seemed easy to scale up to a larger amount so I chose it. It worked very well, and I look forward to using it often. Thank you very much for sharing this recipe with us. I wanted to add: the important thing about this recipe, and what I was looking for when I found it, is that it gives the ratio of vinegar to oil. One part vinegar to three parts oil. If you remember that, you can do anything.
