Basic Muffins

"This is a recipe for basic muffins. You can make them as is or add any combination of fruit or even cocoa to make chocolate muffins. You could also just try grating in some orange or lemon zest. The possibilities are endless."

  • Melt the butter in a small saucepan or in the microwave on low heat.
  • Sift, measure and then place the flour in a large bowl.
  • Add the baking powder, salt and sugar.
  • Beat the egg well in a small bowl.
  • Add the milk, vanilla and melted butter and mix thoroughly.
  • Put the above wet ingredients into the large bowl of dry ingredients.
  • Stir just until the flour mixture is moistened.
  • Fill greased muffin tins 1/2 to 2/3 full.
  • Bake at 400 F or 200 C for 20-25 minutes.
  • The muffins should be golden brown in colour and spring back when touched.

  1. I was looking for a basic muffin recipe I could easily convert to gluten-free and this was it! Instead of milk, I used 2 Tbsp buttermilk powder and 1 cup water. It's just a personal preference for buttermilk in my baking and it seems to help gluten-free baking stay more moist. I can't wait to use this as a spring board to exciting combos of fruit and nuts!

  3. great basic, neutral muffin recipe--I've used it a few times with good results every time. for sweeter muffins, I double the sugar, but otherwise I wouldn't change a thing!
     
  4. Made this vegan using egg replacer and added some flax seed, dried apples, and cinnamon. The texture was great and they are easily made vegan. However, next time I will add more sugar. My girlfriend wouldn't eat them because they weren't sweet.
     
  5. These muffins are the best! I used 1 cup white flour, and 1/2 cup wheat flour... and oil instead of butter. Added some blueberries also. They cooked up light and fluffy but the tops were just a little bit crispy! So good!

  3. I tried a couple of basic muffin recipes before I found this one. These are delicious as is, but are very adaptable! I use half whole wheat flour, and I substituted oil instead of butter--they were still great! I tried adding bananas as suggested by one reviewer, that was great. I also cut the milk to 1/2 cup and added a cup of applesauce and a teaspoon of cinnamon, and they were fabulous! Thanks for this recipe!

This is a picture of me and my husband in Portugal, climbing up above the clouds with our bikes. Right now we are travelling around the world on our bicycles, so I only pop onto Zaar occasionally, when internet connections and time allow me to. Our trip may take several years so if it's urgent, it's probably better for you to post in the forums ;) Good food is really important to me -- I am happy to pay extra for food that I feel is produced in a sustainable and ethical way and always try to eat using seasonal produce. When we were in the UK we rarely shopped at supermarkets, trying instead to favour small producers, although we were very lucky in that we lived in London and there was lots of choice. We also were fortunate enough to have a weekly organic veg box delivered to our door, filled with so many lovely vegetables for very little money. It really opened my horizons in terms of the variety of vegetables I eat. If you're in the UK, check out Riverford for a box supplier as they're amazing!
