    This is, as the title says a basic muffin recipe. You can add ¾ cup of your fruit of choice, blueberries, raspberries, peaches……. If using frozen fruit, do not thaw. You can also have them plain.

    Ingredients:

    Serves: 10

    Directions:

      Sift together dry ingredients.

      Make a well in the centre.
    3. 3
      Combine the wet ingredients then mix with dry ingredients.

      Stir only until combined.

      If using fruit, add to batter.
    6. 6
      Fill paper-lined muffin cups 2/3 full.

      Bake in preheated 400 degree Fahrenheit oven for 20 to 25 minute, or until toothpick inserted in centre comes out clean.

      This recipe needed more liquid than the recipe called for as well as needing much more sugar. Even with some added milk and more than double the sugar it was not good. Tried this recipe with some fresh blackberries and had to throw them all away. : (

      First let me say I am a horrible baker. I can cook but not bake. The fact that these came out for me speaks volumes about the simplicity of the recipe. I will say that the sugar being 2TB is much less than other muffin recipes. However, I am of the opinion that a really sweet muffin is simply a cupcake without icing. I think sweetness should be for cupcakes, so I was not disappointed in the lack of sweetness. You can always up the sugar amount. I did not have milk, so I used 1/2 c half and half and then added water to make it a full cup. (I told you I was not a baker!) I am sure that changed the texture, even though the texture was fine. It looked more like a biscuit but again, I am sure that is my fault. I used those fancy cupcake paper things that are higher up? They looked great, and I added mini chocolate chips. To make it a tiny bit sweeter for my daughter I put a little powder sugar on the top. She said it was delicious. So...five stars because it was cheap to make, few ingredients, ingredients that most people have on hand in the house, easy to make, my daughter loved it and it is flexible so that you can add many different extras.

      I've now come back to this recipe several times and had great success each time. Lemon zest with a crumble topping, bananas & almonds, bacon & cheese...this recipe loves me; I can't seem to screw it up. I follow this simple recipe each time, and I haven't had a problem with a lack of moisture or missing the sweetness component. We're talking muffins here, right, not cupcakes? Best of all it makes me feel creative and inspired. What shall I try next? Thank you for sharing!
