For quick broccoli & cheese, macaroni & cheese, over potatoes or with diced chilies added for nachos.

  1. Melt butter in small sauce pan until it stops bubbling. Add the flour, stir until fully incorporated. Cook over medium heat until the roux browns slightly.
  2. Add the milk slowly while whisking continually. Cook and stir over medium high heat until the sauce bubbles, then remove from heat.
  3. Add the cheese & mustard powder, stir gently until the cheese melts and incorporates completely. Season to taste.
