Barley, Shiitake, and Spinach Pilaf

- 236.59 ml pearl barley
- 709.77 ml water or 709.77 ml stock
- 14.79 ml vegetable oil
- 29.58 ml dark sesame oil
- 236.59 ml diced onion
- 2 garlic cloves, minced
- 113.39 g fresh shiitake mushrooms, sliced
- 226.79 g button mushrooms, sliced
- 473.18 ml spinach leaves, loosely packed
- 14.79 ml sesame seeds
- 14.79 ml tamari soy sauce
- 0.61 ml cayenne, to taste
directions
- Add the barley and water to a medium saucepan. Cover and simmer over low heat for approximately 1 hour.
- Heat a nonstick pan over medium heat. Add both types of oil and saute the onions, stirring occasionally, until brown (about 5-7 minutes).
- Add garlic and mushrooms; saute for approximately 3 minutes.
- Add spinach, cooked barley, and sesame seeds; saute for 5 minutes, or until barley is heated through.
- Season with tamari and cayenne.

I opted for the stock over the water (beef - we're somewhat carniverous). Lil sis liked this quite a bit, but DH had a very hard time deciding whether or not he cared for it at all. I had a hard time deciding on this one too, but weirdly enough I was pretty sure if I liked it at all, I liked it quite a bit. Thanks for posting. We'll probably try this again, hopefully when we're not all in such a weird and indecisive mood.

I wandered onto Recipezaar less than a year ago, looking for a lentil soup recipe. I'm pretty sure I haven't left the computer since then...I've been completely sucked in by this site! Of course, I do take the occasional break to actually cook the recipes I find.
When I'm not at my computer or in the kitchen, I'm working toward my PhD in clinical psychology from Kent State. I also work as a therapist at the campus clinic, teach a class (Social Psychology this semester), and work as a research assistant. I'm a little bit busy. I do usually find time every day to cook something for myself with the help of this site, and to exercise (to counteract the effects of the great recipes I find here).
I don't have much time in my life for hobbies at the moment (sigh), but I seem to recall that I used to like reading, going to see musical performances, and watching movies. I still do my best to travel as much as possible. My sister, Kate, my boyfriend, Jake, and my friend, Kris, are my favorite travel partners. Kate and I go on an "eatacation" every year.
