My husband and I love this recipe. I am not sure it makes 3 cups when done since usually 12 oz of soup is plenty for either of us, but we either server this with fresh bread or I increase the amount to 3 servings (or 4.5 cups). Our 19 month old also likes this, but she still doesn't eat much.

  1. In a large saucepan, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in flour. Add the remaining ingredients; bring to a boil. Reduce heat, simmer, uncovered, for 1 hour or until barley is tender.
