I was just looking for a way to use up some veggies I had in the house already, and was so very happy with the results!
I halve the ingredients, since i lack a proper casserole dish. My pie plate works great though!
It was so easy and delicious! I am definitely making this again.

Easy, delicious, and healthy-great recipe! Wonderful ingredients. Love the thyme. I used 1 teaspoon of dried thyme and next time will use more, and there will be a next time. I really liked the combination of flavors. I was tempted to subsitute turnips for the potatoes, but chose not to. I plan to do that in the future. A relatively easy recipe with impressive results.
