Barbecue Scalloped Potatoes

- 3 large baking potatoes
- 1 1⁄2 teaspoons salt, divided
- 1 (10 ounce) can cream of mushroom soup, undiluted
- 1 (5 ounce) can evaporated milk
- 1⁄4 cup spicy barbecue sauce
- 1⁄4 teaspoon onion salt
- 2 cups sharp cheddar cheese, shredded
- 1 dash paprika
directions
- Cook potatoes with 1 teaspoons salt in boiling water to cover, 30-40 minutes or until tender. Cool slightly; peel and slice. Set aside.
- Stir together remaining 1/2 teaspoons salt, soup, milk, barbecue sauce, and onion salt until blended.
- Layer half each of potato slices, barbecue sauce mixture, and cheese in a sprayed 2-quart baking dish. Repeat layers; sprinkle with paprika.
- Bake at 350°F for 45 minutes, or until golden.

This was really good. I loved the flavor of the potatoes. The only problem I had was that I didn't read the recipe correctly. I only had about an hour timewise to fix dinner so I didn't cook them in the boiling water first. I've never made scalloped potatoes that way before and knew they would come out fine BUT the potatoes turned out a little bit hard so I put them in for 10 minutes longer (and then forgot about them which accounts for the dark photo). Under the top, which if you have ever eaten fried cheese you know it is good anyways, the potatoes came out perfect. I will definatly make these again but following the directions next time. I will just make them when I know I will have more time. If I had read the directions first I would have had my husband start boiling them before I got off of work. I will know better next time.

I made this to accompany a Lancashire Hotpot tonight! It was a very tasty potato dish, and I was intrigued to try it with tinned evaporated milk! I might cut back on the barbecue sauce next time - so that the other delcious flavours can come through more! However, still a very tasty and easy potato dish. Thanks for posting this Kizzikate!
