    JenCo's Note:

    This is a recipe that was passed down from my Mom. It can be used with Bananas, Zucchini or Apples. You can also substitute the vanilla with coconut flavoring or rum flavoring. Great way to get the kids to try zucchini. They will never know it is in there. We love this for breakfast or dessert.

    Glaze

    Directions:

    1. 1
      Heat over to 325 degrees. Beat eggs until frothy, stir in sugar, oil, bananas, and vanilla. Combine dry ingredients, stir into mixture until well mixed, add nuts, stir well and pour into two well greased loaf pans. Bake 1 hour. Set pans on cake rack and glaze.

      Glaze directions: Bring to a good boil then add vanilla.
