Banana & Walnut Muffins

- 245 g self-raising flour
- 110 g caster sugar
- 50 g light brown sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 2 bananas
- 1 large egg
- 8 tablespoons vegetable oil
- 1⁄2 cup walnuts
- 1 teaspoon vanilla essence
- 1⁄2 teaspoon cinnamon
directions
- Sift the flour into a bowl and add the baking powder, salt, sugar & cinnamon.
- In a food processor / blender (or in a large bowl) mix the vegetable oil with the bananas, egg, melted butter (cooled) & vanilla essence. Put this mixture in a large bowl.
- Using as little mixing as possible, add the dry ingredients to the wet ingredients along with half a cup of crushed walnuts. Try to incorporate the ingredients with as little mixing as possible as over-working the batter leads to tougher muffins.
- Place into muffin cases in a muffin tin and bake in a preheated oven for approx 15 minutes at 180 degrees.
- This makes approx 6 large muffins but you can make smaller ones if you prefer, which would yield approx 9-12 muffins.

I love cooking. I'm not a great "chef" but nothing relaxes me more than spending hours (that i have to spare) in the kitchen inventing new dishes or trying out new recipes.
Unfortunately, i'm a very picky eater myself so I tend to only cook things that I personally like, which is tough on my friends and family, but it means I put a lot of effort into making my meals extra-tasty!
