Banana Waffles (GF, Grain-Free, Dairy Free)

Adapted from a blog on the Internet. I added baking powder, which since it has corn starch, might eliminate it from the grain-free, but I'm not strictly following this diet. Also it was for pancakes, but waffles are the big thing here - somebody gets the belgian waffle maker out every morning - so I made it as a waffle. Tasty, but not crisp. Next time I think I'll add some chopped walnuts for crunch.

  1. Put all ingredients in blender, blend on high 2 minutes until frothy.
  2. Pour 1/2 of batter into pre-heated non-stick waffle maker, cook until ready.
  3. Serve plain, with fruit, or maple syrup.
