  • Preheat oven to 375 degrees F.
  • Lightly grease 10 muffin cups, or line with muffin papers.
  • In a large bowl, mix together flour, baking soda, baking powder, and salt.
  • In another bowl, beat together bananas, sugar, egg and melted butter.
  • Stir the banana mixture into the flour mixture just until moistened.
  • Spoon batter into prepared muffin cups.
  • In a small bowl, mix together brown sugar, flour and cinnamon.
  • Cut in butter until mixture resembles coarse cornmeal.
  • Sprinkle topping over muffins.
  • Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

  1. Very good. I followed the recipe exactly except for one change - I added 1tsp vanilla since several reviews mentioned it. My batter yielded 12 muffins. There was too much streusel mixture - it spilled over on the sides of the muffin tin, and it falls off the muffin. If I were to make them again, I'd use less filling or more butter cut into the filling so that it baked into the muffins vs. just sitting on top of them. The flavor and texture is great, though, and I will make them again, cutting back on the sugar as they were more sweet than I like.
     
  2. Great recipe! Loved the fact that it used so many bananas since my freezer is being over run with them.Used oil instead of butter and added vanilla. Made a double batch and got 24 great muffins. Will make often.
     
  3. I had 4 frozen over ripe bananas in the freezer taking up room,that is badly needed for other things..My DH isnt a fan of banana bread but does like a layered banana cake I make. But that is more than we can eat. So, I decided to make these muffins. I am so glad I did. These were great.Even my DH liked them..I omitted the 1/3 cup butter by mistake but turned out wonderful without the added calories..Maybe it had something to do with the thawed bananas,how when they thaw they're just a mush..Anyways,I made jumbo muffins(6) I filled the paper liners 1/3 full then top off with 1/3 of streusel mixture then finished filling with batter and topped off with leftover strusel mixture. Baked 375 for 30 minutes..We loved the flavor and texture..A nice way of using up frozen bananas..Thank U,I will make these often..
     
  4. Excellent! Very moist and tasty with a nice crunchy top and I was able to make 12 good-sized muffins. I baked them at 350° instead of 375° for about 22 minutes and they came out perfectly. Definitely something I will make again. Thanks for posting!
     
  5. Awesome muffins! An easy to follow recipe using ingredients I normaly have on hand made a delicious and moist muffin with a little crunch on top. Who could ask for more? I made 12 muffins, rather than ten and baked them exactly 20 minutes. I had to give the recipe out twice so far. Thanks for a "keeper" of a recipe Geema!

  1. These are the best muffins I have ever made! I substituted the butter with oil & they came out perfect. Very easy recipe to make.....will be leaving my bananas to sit longer in the fruitbowl from now on so I can make these often!
     
  2. I added an extra tbsp of butter to the topping to make it slightly more crispy
     
  3. Very moist and the banana flavor shines through. The day after baking, I placed a couple of pieces in a plastic bag to take to work for breakfast. By the time I pulled them out of the bag they were pretty mushy. I recommend wrapping pieces lightly in wax paper or aluminum foil instead. Thanks!

<p>Life often interupts our comfortable routines in very unexpected ways and in the past three years I've certainly faced some challenges.&nbsp; As a health nut who ate mostly vegetarian I was beyond shocked to discover that I was diabetic.&nbsp;<img title=Yell src=../tiny_mce/plugins/emotions/img/smiley-yell.gif border=0 alt=Yell /> I shouted and rebelled and cried.&nbsp; But the good news is that I can control my glucose levels simply by eating very low carb.&nbsp; What a complete turn around it was to&nbsp;pass up&nbsp;all my high carb vegetarian foods like grains, and veggies and embrace meat!&nbsp;<img title=Surprised src=../tiny_mce/plugins/emotions/img/smiley-surprised.gif border=0 alt=Surprised /> I've adjusted to this limited diet and thanks to Zaar can eat a nice variety of healthful meals.</p> <p>&nbsp;The next challenge was a freakish fall I took while in New York with my daughter that left me paralyzed and in much pain.
