- 2 1⁄2 cups vanilla wafer crumbs (about 80 wafers)
- 1⁄2 cup margarine or 1/2 cup butter, melted
- 1 (8 ounce) package cream cheese
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 (20 ounce) can crushed pineapple, drained and juice reserved
- 4 bananas
- 16 ounces Cool Whip or 16 ounces whipped cream
- 1⁄2 cup walnuts, chopped
- maraschino cherry, for garnish
- chocolate syrup, for garnish
directions
- Preheat oven to 350 degrees.
- Combine vanilla wafer crumbs and melted margarine or butter and press evenly onto bottom of a 9x13-inch baking dish.
- Bake crust in 350 degree oven for 5 to 8 minutes or until lightly golden.
- Set aside to cool completely.
- In mixer bowl, beat cream cheese, powdered sugar, and vanilla until creamy.
- Stir in 1 cup of Cool Whip or whipped cream.
- Spread cream cheese mixture over cooled crust.
- Gently spread well-drained pineapple over cream cheese layer.
- Slice bananas and dip in reserved pineapple juice to keep bananas from getting brown.
- Arrange banana slices over pineapple layer.
- Spread remaining Cool Whip over bananas.
- Sprinkle walnuts over Cool Whip or whipped cream.
- Garnish with cherries and chocolate syrup as desired.

Made this for the first time and when hubby came home and saw it his eyes got really big and said "Can I have some NOW?" lol. Everyone loved it. Will make again for sure. One tip for anyone making this....because I am a by the book type cook, I bought an 11 ounce box of vanilla wafers and actually counted 80 out....dont do that, there is about 84 in the box lol. Thanks for the great recipe. :)
