Our favorite use for over-ripe bananas, a nice alternative to banana bread. It has a light lemon glaze that really compliments the spice and banana filled bars. *Note* Recipe edited per Laurie's Review suggestions for the glaze.

  1. Cream sugar and shortening.
  2. Add the rest of the ingredients and mix well.
  3. Pour into a greased 9 x 13 pan and bake at 375° for 25- 30 min or until a toothpick inserted into the middle comes out clean. Spread the glaze over the top while still hot.
  4. Glaze.
  5. Mix butter, water, and lemon juice well. Add enough powdered sugar to make thin glaze(a little thicker than gravy).

Delicious and super easy. I wanted to see how they tasted a day old, but when I woke up to have one with my coffee, they had mysteriously disappeared!!!

These bars are fabulous. I took them to a baptism picnic and they were gone before we ate the meal. My husband likes them better than banana bread and already asked if I could make them again this week.
