Banana Raisin and Oatmeal Pancakes

"Although the recipe does not call this, I like to soak the oatmeal in the milk for about 10 minutes, I really think it improves the texture of the pancake. These are a must served with maple syrup or honey. Your kids will love these, I know my "big" one does!"

  • In a medium bowl combine the oats, flour brown sugar, baking powder, baking soda and cinnamon.
  • In another bowl whisk together sour cream, milk, eggs and vanilla.
  • Whisk dry ingredients into the sour cream mixture JUST until blended.
  • Fold in mashed bananas, raisins and 1/4 cup melted butter; mix to combine.
  • Drop about 1/3 cup of batter onto hot skillet or griddle that has been brushed with melted butter.
  • Cook pancakes until bubbles form on top and bottoms are golden brown (about 2 minutes on each side).
  • Delicious!

  1. These didn't turn out as wonderfully as I am used to a Kitten recipe, but it's probably my own fault. I didn't soak the oats, then the batter was wet enough that I didn't add melted butter, especially since I run a stick of cold butter around the skillet between pancakes anyway. These didn't really set up in the pan and were kind of burnt on the outside and still doughy in the middle. The flavor was there, but it was a bit too squishy in the middle for our tastes. My bananas were super ripe too, so might have had something to do with it. We decided it was a bit like eating banana bread dough... I think next time I'll just stick with my regular recipe for pancakes and just add banana and oats to that when I've got the craving. Thanks anyway, Kitten!
     
  2. These make a lovely filling brekky pancake. I did a half batch for toddler DD & I & we both enjoyed them. The yoghurt & butter really help soften the oats so you don't get that heavy denseness when cooked that is normally apparent in an oat pancake. Thanks for posting!
     
  3. Made as instructed, & also soaked the oats in whole milk, then used sour cream & continued on! Topped these with some homemade cranberry butter I'd made & also some light corn syrup & had a wonderful pancake breakfast! [Made & reviewed for the Cookathon for Kittencal]
