MMMmmm... My 2 most favourite things--all in one muffin!! Recipe can also be made into 2 medium-sized loaves, if you wish. ENJOY!!!

YUMMY! I replaced half the oil with apple sauce, half the white flour with wheat, and didn't add the stuseal topping. Fantastic!

  1. Preheat oven to 375 degrees F.
  2. STREUSEL TOPPING: Combine sugar, flour, and cinnamon.
  3. With a pastry blender, cut in butter until mixture resembles crumbs; set aside.
  4. BATTER: Combine flour, salt, baking soda, sugar and cinnamon; stir in pecans.
  5. Combine eggs,vegetable oil, mashed bananas, drained crushed pineapple and vanilla extract in separate bowl; add to flour mixture, stirring just until dry ingredients are moistened.
  6. Do not over stir.
  7. Fill paper-lined muffin tins a little more than half full.
  8. Sprinkle tops with streusel mixture.
  9. Bake about 25 minutes.
  10. Let cool for 10 minutes, then remove and finish cooling on wire racks.
  11. Batter can be used to make 2 medium-sized loaves.
  12. Bake at 350 degrees F.
