I was looking for a way to use up two ripe bananas this morning and found this recipe. We really enjoyed these. My husband loves peanut butter on his pancakes and this was a perfect match with the bananas. I will be making these again, although my son still thinks buttermilk pancakes are the best.

Super easy recipe, and very yummy and moist pancakes. I had two very ripen bananas and made this for my family, they really enjoyed it. I added a tsp. Of vanilla to the recipe.

Wonderful recipe. I doubled everything except the bananas (I had two HUGE ones), and threw in a bit of nutmeg. They turned out great. The grand kids loved them. Thank you for sharing!

Delicious. Made this for my DH for father's day. He stated it was a keeper. Not too sweet, just right. We added slivered almonds & used butter pecan syrup. Excellent!

Pretty good. Added vanilla and a little cinnamon and walnuts. Flavor was great. Not sure how I feel about the banana texture in there but my daughter loved them.

I loved these and my children ate them up. I used whole wheat flour and topped them with homemade buttermilk syrup which melded lovely with the bananas in the pancakes. For the syrup I melted 1 cup butter with 1/2 cup buttermilk then added 1 cup sugar and 1/2 tsp baking soda boiled for 5-10 minutes stirring often then took off heat and added 1/2 tsp vanilla. So yummy!

This was an excellent recipe. It is a good way to use up bananas that are getting too ripe. I especially appreciated the directions for freezing pancakes. They worked like a charm, and the pancakes tasted fresh two days later. I didn't know you could do this.
I always make recipes from scratch, but there aren't many days when I have the time to make them. Now I can make them on weekdays or evenings and serve them on Sundays.
Ohio Librarian
