Banana Overload Oatmeal Cookies

"I have enough recipes for three lifetimes...and this is just one more I FINALLY tried! I had an overabundance of over-the-hill bananas and used them all in one fell swoop with this recipe! Easy, moist, tastes good! Not too many cookies left after only one day either! Feel free to change the spices to your liking! Sorry...no clue as to the origin of this recipe. Prep time and baking time are guesstimates. I use commercial-sized sheets so it doesn't take me too long!"

  • Preheat oven to 350*F. Spray cookie sheets.
  • Whisk the egg, brown sugar, and oil together. Add mashed bananas and vanilla; mix well.
  • Mix in the oats and allow to set for at least five minutes.
  • Combine flour, soda, and spices; then mix into oat mixture.
  • Stir in nuts.
  • Drop "balls" (rounded T.) about 2" apart. Bake 13-15 minutes. Move cookies to rack to cool.

  1. I'm sorry, I was really disappointed by these. I was really hoping for something more like regular chewy oatmeal cookies, but these were basically like little mounds of banana bread. I like banana bread, but I'm just not a fan of cakey cookies. I'm sure that anyone who likes cakey cookies and tries these will love them, because they do taste good, but the texture just put me off. I'm not assigning any stars to this because I don't want to make people think this is a bad recipe with a low rating -- it's really not. It's just that it doesn't suit my personal tastes. Sorry again! Thanks for posting! Made for PAC Spring 2014

In some circles, I am known as the "pie lady" because I often make pie...I think it's easier to make than cake! I have an extensive pie recipe collection but am certain that it will NEVER be complete! (My muffin recipe collection is also large!) I am a firm believer in experimentation in the cooking department and often give "How To Cook Without A Book" for any appropriate gift-giving occasion! I also enjoy "playing" in the dirt and find that I need Spring because it gets me away from all the extra cooking I do in Winter! My Mom always said, "If you can READ, you can COOK!" and I have no patience for anyone who refuses to read in the kitchen!
