Banana Oatmeal Cooky/Cookies

easy cooky since 1962...substitue raisins wit chipits, or dried cherries, dried cranberries,,,try different variations...

• Prep Time: 10 mins
• Cook Time: 15 mins

Ingredients:

Yield: 48 cookies

• ¾ cup shortening
• 1 cup white sugar
• 1 whole egg
• 1 cup mashed banana
• 1 ¾ cups oatmeal (large flake..not instant)
• ½ cup chopped walnuts
• 1 ½ cups all-purpose flour
• ½ teaspoon baking soda
• 1 teaspoon salt
• ¼ teaspoon ground nutmeg
• ¾ teaspoon cinnamon
• ½ cup raisins (or choc. chipits, or cinnamon chipits)

Directions:

1. Cream the shortening, sugar, and egg.
2. Add mashed banana, otameal, nuts, raisins.
3. Sift the flour with spices.
4. Add to mix.
5. and combine well.
6. Drop by spoonfuls onto ungreased or parchment lined cookie sheet.
7. Bake 400 degrees f.
8. 15 minutes.
9. Or test bake one to the temperature.
10. you desire and bake.
11. 350 degrees f.
12. for 18 minute.

Good cookies! I am cooking up a bunch of over ripe bananas this week and this recipe was just the ticket today! I added craisins (dried cranberries) and flaked almonds. Next time I will probably make my drops a bit bigger as they didn't flatten out as some drop cookies do. At 400 the temp was too high for my oven cooking on the middle shelf, the bottoms overcooked before the tops where golden. So I turned it down.

My family and I really enjoyed these cookies. They were very moist, and went great with tea. I think that next time I make these cookies I would add in a little bit more of the spices!! Thanks for the great recipe.
