Originally found this on parentsconnect.com as Make-Ahead Banana Oatmeal Breakfast Cookies. I changed it up to accommodate what I had on hand. These come out with a cake-like texture.

  1. Preheat the oven to 350°.
  2. With an electric mixer, beat the peanut butter and applesauce until combined. Beat in the brown sugar. Add egg and vanilla, beating until mixed. Stir in the bananas, baking soda and salt.
  3. Add the flour and oat bran, mixing until combined. Stir in the oatmeal, walnuts, and chocolate chips.
  4. Drop ¼-cup dollops of batter onto an ungreased cookie sheet. Press down slightly with the palm of your hand to flatten into three-inch rounds.
  5. Bake for 15 minutes or until the edges are browned. Let stand 1 minute on the tray, then remove to a wire rack.
