    Hearty, moist, sweet bread. I was experimenting to find a good alternative to banana quick bread that was healthier and I could make in my bread machine. The oats add such a wonderful texture! I like it, hopefully you will, too!

      I just made this recipe on a whim. I used 4 1/2 bananas for my batch. I wasn't very happy with this recipe though. It doesn't taste like bananas at all. It is also has a very dry texture despite the fact that it the bread is moist. I think this is due to the large amount of oats in the bread. I should have read the reviews prior to making this bread. I personally would recommend finding another recipe rather than making this one.

      I made this recipe about a week ago. I have a Black & Decker All-in-one Deluxe bread machine and was low on some of the ingredients. I only used 3 bananas and added about 1/4 cup water to the mashed bananas to make up for the loss of liquid, only had 2 cups oatmeal so added a 1/2 cup flour, I also added 1/4 cup raisins to it. During the mixing I saw that is was a bit gooey so I added about 2 tbsp of flour and that resolved the issue. The loaf was dense and moist but not real strong on the banana flavor. Would recommend using at least 4 bananas for it.

      I wanted to make this as a bread to have toasted with butter for breakfast. So I loaded up the bread machine and off I went to do other things --- I never even heard the beep to check the texture -- and my loaf collapsed in the middle -- the dough was evidently too wet. I made as directed with a 1.5 lb loaf setting on SWEET and light crust -- with 4 bananas. I made sure all liquid ingredients, including the bananas, were less than 100 degrees. I trimmed the edges of the loaf where the bread rose and it is quite tasty! Perfect for what I was trying to achieve -- now I'm disappointed that it didnt work out. BUT -- notice to those trying this recipe -- depending on the size and moisture content of your bananas, actual results may vary...That's what makes baking so interesting! FYI -- I am a generally successful baker, even with yeast breads -- manually made and machine -- so I'm not thinking that this is the recipe's fault, nor my own, but just a matter of happenstance. So try again we must -- and when I have 3 bananas left over I will try again, and re-review.
