I omitted the walnuts and added about 1/3 cup of freshly ground flax seeds for nutritional value, and it was wonderful. I also increased the yeast to 2 1/4 tsp, which is what I typically use for a loaf of this size. Maybe the small amount of yeast is the reason for the poor results some have had.
Very good bread. I filled with cinnamon sugar and nuts. I wasn't sure about the baking time and wound up burning them.. but the inside was fine. I'll lower the temp to 350 or 325 next time. I first made the dough in the machine, then rolled out and filled and put into 3 mini loaf pans. I let them rise for one hour and baked at 375 for 36 minutes.
I loved this recipe, though I did make a few changes and found the slight banana flavor and not to sweet flavor perfect for those changes. Made in the ABM in the dough cycle (I always prefer to bake myself) and added flax for the nutritional boost. When ready divided the dough and froze half for later, rolled the dough out and added a cinnamon filling and then rolled up and allowed to rise until doubled. After baking removed and added a vanilla glaze. It turned out perfection and my family raved over it. This is a great recipe and I found the slight hint of banana perfect.
I always use old bananas (Squishy not moldy). That gives an intense banana taste.
Baked fine in my Zo bread machine using basic white setting. No problem with the crust. Texture was excellent. I used 2 1/2 tsp bread machine yeast, per the Zo recipe for basic white. However, flavor was lacking. Just a hint of banana flavor and too few walnuts for my taste. I know the flavor will not be as intense as if it were a quick bread but one should be able to distinguish it as being made with bananas. Perhaps doubling the bananas or adding some banana food flavoring would help.
I started making bread with a machine a few weeks ago. I finished more than 10 loafs and they were all pretty dry & hard. I was about to give up and ran into this recipe and made a fabulous bread which was soft, moist and tasty. Now, I am motivated to modify some basic recipes (white, wheat, bread-mix) to add an egg with adjustments to other ingredients like water, yeast, etc. THANK YOU, Marie!
Using coconut milk,
and shredded coconut in place of the walnuts,
also brown sugar instead of white
2 tbsp flaxseed meal
1tbsp almond flour
white bread with light crust
2 lbs settings (after reading it should have been 1.5)
the crust is tough
the bottom of the loaf mushy
not sweet, more simple sandwhich bread or roll bread
blew up and sunk back in on top
the flavor is mild and the bread is thick
it is scrumptous
and smells great
just expected more. more of a light and fluffy with a nice soft crust and banana-y flavor
Doubled the banana and yeast amounts, still only had a mild banana flavour (I would suggest using a cup instead of half) and rose well. An easy way to make bread and make use of old bananas; thanks for the recipe!
Yummy!! I have been looking for a banana bread recipe for a while and decided to try this one. I'm sure glad I did!! This recipe was good. I did follow the advice of the other reviews and bumped up the yeast. I also didn't toast the walnuts (I always ended up burning them). And since my boyfriend loves bananas I used a full cup instead of the half. Thanks for the recipe!! :)
For 3 cups of flour, you should use 2-1/2 tsp. dry yeast...not 1 tsp. That is why the bread hardly raised. However, the flavor was good.
