  1. Mix flour, walnuts, wheat germ, brown sugar, salt, cinnamon, baking powder, and nutmeg in large bowl.
  2. Stir in bananas, milk, butter, and egg.
  3. Fit 12 muffins cups with paper liners.
  4. Coat each with cooking spray.
  5. Fill muffin cups evenly with batter.
  6. Sprinkle with cinnamon sugar, if desired.
  7. Cook in a preheated oven at 400 degrees for 20-22 minutes.
