Muffin Batter
- 1 1⁄2 cups flour
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon baking powder
- 1⁄2 teaspoon salt
- 2⁄3 cup sugar
- 3 tablespoons vegetable oil
- 1⁄2 cup buttermilk
- 1 egg
- 4 mashed bananas
- 1 teaspoon vanilla
- 2⁄3 cup chopped walnuts

Crumb Topping
- 1⁄2 cup flour
- 1⁄4 cup sugar
- 1 dash salt
- 3 tablespoons butter flavor shortening
- 1 tablespoon mashed banana
directions
- Preheat oven to 350°F Grease or line 12 muffin tins with paper liners.
- Prepare the crumb topping: In a small bowl, whisk together flour, sugar and salt. Cut shortening into flour mixture until it resembles coarse crumbs. Larger crumbs are a bit more desirable. Stir in the mashed banana and set bowl aside.
- Prepare the batter: In a medium bowl, sift together flour, baking soda, baking powder and salt. In a large bowl, whisk together sugar, vegetable oil, buttermilk, egg, bananas and vanilla. Pour flour mixture into banana mixture and stir until batter is just combined. Spoon into muffin tins, filling each 2/3 full. Top each muffin with crumb mixture, dividing it evenly.
- Bake for 18-21 minutes, until a tester comes out clean and the muffins spring back when gently touched.

I live in northern California and I am the sales manager for a local retail store. I am happily married with two wonderful sons; my oldest is serving our country in the United States Marines and is now in Djibouti Africa. The other is still at home and my wonderful handful. I have recently become a mother in law as my oldest married before he left the country. I also have two cats which thing they are more human then feline, and we have tropical fish. So now I look forward to becoming a grandma (but not real soon) I love camping and reading and cooking I used to own a bakery with my mother (rest her soul) but I don’t get a chance to cook much because of my work schedule. I am always on the hunt for good low cal low fat tasty dishes and things I can make ahead of time. Foods I love CHOCOLATE…. Ok ok I know not a food group per say…. But it should be. Alright I just love food. I love to try new things and flavors. My passions I guess you could say are cooking a good meal and having tons of family and friend around to enjoy it. My peeves people who lie and cheat.
