- 1 1⁄2 cups all-purpose flour
- 1 cup oats
- 1⁄2 cup granulated sugar
- 1 teaspoon baking soda
- 1 pinch salt
- 1 egg, slightly beaten
- 1⁄2 cup ripe banana, mashed
- 3⁄4 cup milk
- 1⁄3 cup vegetable oil
- 1⁄3 cup coconut, shredded
- 1⁄3 cup pecans, chopped
- 2 tablespoons honey
- 2 tablespoons melted margarine
directions
- In a large bowl, stir together flour, oats, sugar, baking soda, and salt. Set aside.
- In a small bowl, mix egg, banana, milk, and oil. Add liquid mixture all at once to dry ingredients, stirring just until moistened.
- Spoon batter into greased muffin cups 2/3 full. Bake in a 400 degree oven for 15 to 18 minutes.
- Combine coconut, pecans, honey, and margarine. Sprinkle about one teaspoon of the topping on each muffin. Return to oven for 1 minute.
