This makes a VERY moist banana loaf. I didn't use all of the 1/4cup milk required for the icing...I just added enough to get a pouring consistancy. Next time I would use only 2 banana's and skip on the icing as I found it made the loaf a little too sweet. Reviewed for Fall 2008 PAC.

  1. Cream butter and sugar.
  2. Add eggs and mix well.
  3. Gradually add flour, baking soda and salt.
  4. Stir in bananas and pecans.
  5. Bake in greased floured bread pan at 350°F for 1 hour.
  6. Ice with mixture of powdered sugar, milk and vanilla. Let drip down the sides.
