  • Mix egg, oil, milk, mashed banana and vanilla in bowl.
  • In separate bowl combine dry ingredients.
  • Add wet mixture to dry mixture.
  • Do not overmix.
  • Spoon into muffin cups and bake at 375 for 18-22 minutes.

  2. Great muffins, my partner absolutely loved them. I only used 1 cup of sugar and they were plenty sweet enough. Will be making these again when we have more ripe bananas :)
     
  3. We loved these. Devoured them! I have old small muffin tins so this made a dozen regular sized and 9 minis for us. I used skim milk and, even with the small amount of oil, this still worked beautifully.
     
  4. dh was looking through my recipes and chose this for me to make. I always make muffins each week for him to eat on his way to work each morning. These were very good and I will make them again for him,,but my personal favorite is still blueberry muffins. I made them exactly as the recipe stated, but used my jumbo muffin pan,,which made 6 large muffins.
     
  5. These were great. I substituted the banana for 3/4 cup of freshly squeezed orange juice and the zest of 2 oranges. Added more chocolate chips. These were great. Orange chocolate...can't go wrong. :)
