ingredients
- 1 1⁄2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1⁄2 teaspoon salt
- 3 large ripe bananas, mashed (the riper the better)
- 3⁄4 cup sugar
- 1 large egg, beaten
- 1⁄3 cup butter, melted
- 1⁄2 teaspoon vanilla extract (not the fake stuff)
- 1⁄2 teaspoon honey
directions
- In lg bowl, mix the 1st 4 ingredients.
- In a different bowl. Beat sugar, egg, vanilla, honey and butter.
- Mix in the bananas.
- Stir into dry mixture just until moistened.
- Fill LINED muffin tray cups 3/4 full.
- Bake at 375° for about 20 - 25 minutes.
- Let them cool on rack and enjoy.

These are SUPER yummy! I used 1 tsp vanilla but that was the only change I made to the ingredients. I baked them in a silicone muffin pan that I sprayed with non stick spray and so didn't use the liners. Man these were SO good! The kids loved them...the hubby loved them....I loved them. This is going to be my go to recipe for my black bananas! Thanks for a great recipe!
