  • In lg bowl, mix the 1st 4 ingredients.
  • In a different bowl. Beat sugar, egg, vanilla, honey and butter.
  • Mix in the bananas.
  • Stir into dry mixture just until moistened.
  • Fill LINED muffin tray cups 3/4 full.
  • Bake at 375° for about 20 - 25 minutes.
  • Let them cool on rack and enjoy.

  1. This is a very nice recipe, very moist. The vanilla is a nice touch. I added a bit of cinnamon and cut back on the sugar to 1/2 cup. Still a little too sweet though. Will save the recipe and make again, but cut down on the sugar even more. Thank you for posting this recipe.
     
  2. These were my first attempt at Banana muffins. They are super moist and full of banana flavor. I did make one slight change. I used 1/2 white sugar and 1/4 cup brown sugar. Next time I might try cutting back on the amount of white sugar a bit more. This recipe will definitely go in the keeper file.
     
  3. These are SUPER yummy! I used 1 tsp vanilla but that was the only change I made to the ingredients. I baked them in a silicone muffin pan that I sprayed with non stick spray and so didn't use the liners. Man these were SO good! The kids loved them...the hubby loved them....I loved them. This is going to be my go to recipe for my black bananas! Thanks for a great recipe!
     
  4. These muffins are wonderful. Great banana flavor, and so easy to make. I made the recipe exactly as written and didn't change a thing. Seems like that 1/2 teaspoon of honey in the mix made such a difference in the texture and flavor. A definate keeper! Thanks for sharing.
