Definitely not your traditional banana bread as it is chewy like a yeast bread. The slight sweetness and the texture reminded me of Boston Brown Bread. It *is* very good with cream cheese. The only change I made was to use walnuts instead of macadamia nuts.
Delicious bread. I made it last night, and only about 1/4 of it is left. I simplified the prep by slicing the bananas straight into the breadmachine pan. I also just left the nuts whole and put them in with the flour. They were "chopped" by the end of the cycle. I bet it would be great toasted, but I am not sure there will be enough left to try that!
This made a delicious and different peanut-butter and honey sandwich for lunch. We didn't enjoy the bread as much on its own, but when we decided to make it into sandwiches we really liked it.
Fantastic!! Turned out great. Only problem was that it didn't last long! They gobbled it up!
This was a really great tasting bread, and such a light texture (so many sweet breads are just a bit too dense for me---but not this bread!) And my whole house smelled like a bakery while the banana macadamia nut bread was baking in my bread machine. Thanks for posting this recipe, Mandy!
Great flavor and texture in this loaf of bread. It made a large 1 1/2 pound loaf. We will be making this breakfast bread again. Thanks, Carole
