      Heat coconut milk until boiled.

      Add banana, sugar and salt and cook for 5 minutes.

      Add mint leaf and turn off the heat.

      I used half the amount of sugar and it was still delectable. It was great with a scoop of ice cream on top.

      Could be called "bananas in a complex caramel sauce". But that might give the impression that it was complex to make, which it was not. Not in the least. I whipped up a batch in no time! Used brown sugar. Could have easily used one cup and that would have been enough. My bananas were a bit on the mushy side, but that was NO PROBLEM (maybe even better). I thought it would be more like a pudding, maybe after cooling it would be. Yum...just too sweet for me, but I WILL make this again w/ less sugar.
