- 4 cups bananas, diced
- 14 ounces coconut milk
- 2 cups sugar
- 1 teaspoon salt
- 1 small mint leaf (optional)
directions
- Heat coconut milk until boiled.
- Add banana, sugar and salt and cook for 5 minutes.
- Add mint leaf and turn off the heat.

Could be called "bananas in a complex caramel sauce". But that might give the impression that it was complex to make, which it was not. Not in the least. I whipped up a batch in no time! Used brown sugar. Could have easily used one cup and that would have been enough. My bananas were a bit on the mushy side, but that was NO PROBLEM (maybe even better). I thought it would be more like a pudding, maybe after cooling it would be. Yum...just too sweet for me, but I WILL make this again w/ less sugar.

I was a grad student at UNC. Now i am in Chicago. The ingredient in Chicago are more profounding though not as in Thailand. I enjoy cooking since i was a kid in my country, Thailand. I try to cook and improve the taste of my recipe. My recipe might be a bit fusion but it's easy to cook and of course it's thai recipe.
